Wow, I struggle with this too. It seems like if it isn't a fire drill I have trouble getting engaged with those longer lead projects. The more the boss trusts me, the worse I do.
Check out the Pomodoro technique. You work for a timed 25 minutes, then a 5 minute no phone break. Repeat this to four cycles but in the last one you take a 20 minute break. I have an app on my phone and watch that’s a timer since it makes it just one click instead of having to mind the timers myself.
I found this helps be get things done at work and home. And that built in break to decompress for a few minutes I have found to be vital.
I can relate. When I have assignments, I set an internal timer/and or physical timer to move onto the next assignment after a certain amount of time. If I don’t do it, I can end up using the whole day being hyper-fixated on solving that one problem or task that has an issue. The good thing is, you have become aware of it. Moving forward, try to implement things that can help you or remind you that you need to get back to business.
Divide your work stream into 30 minutes or smaller block tasks and list them. Cross them out as you complete them.

You could try body doubling! Sometimes working with someone else and checking progress every hour or so helps.
